Homemade Granola

I had the privilege of eating some homemade granola at swim camp. It was so delicious. It wasn't crunchy because it was so hot outside, but still yummy. I got the recipe from a friend and this was my take on it.

Mix dry ingredients:
4 cups rolled oats
1 cup sweetened coconut (original recipe says unsweetened)
1/4 cup slivered almonds
Dash of chi seeds, flax seeds, sesame seeds, sunflower seeds
1.5 cups died cranberries or other dried fruit that you like.

Cook on med to low heat
1 cup coconut oil
3/4 cup honey

Mix all together, place on baking sheet (or 2) and bake 300 for 20 min because I did one sheet I baked it for 35 min mixing along the way.

Yummy stuff! Snack, eat with milk or yogurt.

Ribs and potatoes

I went to a give star restaurant a while back and ordered the worst ribs I had ever eaten. EVER! They were so bad I couldn't even get the meat off the bone. Now I am one to complain at any restaurant that I go to. However, this time those 3 people around me also had the worst ribs ever made. So we told the server and she said they decided to take them off the new menu.
Tonight I made amazing ribs. They were perfectly cooked and seasoned. If I can make ribs how hard could it be for a professionally trained chef at a five star restaurant...
Pictures from the phone never do justice to good food.
Pork Rib rub
I cheated I used some Montreal steak rub. Added ample brown sugar, paprika, onion powder and garlic powder. Rub
I wrapped them in foil and placed them on a cookie sheet.
Place in over on 200 for an hour. Raise heat slowly every hour and at the end every 30 min. The last hour add BBQ sauce to ribs keep covered for 30 min an then open them add a little more bbq sauce turn to 375 cook for 15-30 more min.
The potatoes are a new creation. I decided I wante a stove top scalloped potato. So I boil my potato rounds. Make a rue sauce add te cheese to the sauce (I used midl and mozerella) stir and then stir in potatoes. If you want it crispier seat potatoes in butter both side then mix in sauce. Or place on broil for a few min.
It was all tasty and happy I didn't have to pay five star restaurant prices to get it!

Disclosure...I made fresh steamed green beans too but I ate them all before I took the pic.

Santas little elves visited us!

Santa's little elves visited us last night. We woke up to a bundle of surprises. Tyson saw the candy first and took no thought of any of the other stuff. I pointed out there was other stuff and made him open the scroll note first.
He was excited to open the note and read what it said but I don't think he really paid attention to it.
Tyson tried to eat all the candy. I reminded him that it said it was for Tyson and Serena. He was so excited for Serena to wake up to make the cookies. So it began, we rolled out the dough and pressed the cookie dough into shapes. Both kids see eager to help.
We baked them and they ended up cooking pretty well! The kids loved watching them bake too...it was my favorite part, because they were just staring at the oven.

We played "goaler" as Tyson calls it while we waited for them to cool. It is a game where Tyson throws a ball at me trying to hit the wall. It's entertaining.
THEDECORATING PROCESS
Tyson with all his colors.
And Serena with all hers. She was quite good at frosting the cookie without getting it everywhere.
The finished product! It's yummy and kind of cute.
Dig in...yummy...Tyson wouldn't let me take a pic, but he does have a rat tail. So when we finished we went and got a much needed hair cut.
